WINEMAKING

Fermentation: Fermentation in steel at a controlled temperature for 10/15 days in a steel tank.

Refinement: Steel tank, "sur lies" and "battonage" for at least 3 months, followed by refinement in bottle for 10/12 months.

Maintenance: store in a cool, dry place, away from light, with an almost constant temperature; lifetime 10 years.

ORGANOLEPTIC PROFILE

Very intense straw yellow, the nose has notes of white flowers and tropical fruits.

In the mouth it has a strong and very persistent attack, with a savory and mineral finish given by the longevity of the vineyards and sandy soils of the Roero.
